Plastic Canvas or Balaclava?

I've started a few fursuit heads before, however they had all-foam construction. And I couldn't get the symmetry on all-foam heads correct and looking right, nor could I make a sensitive moving jaw.

Which one of these will produce a super sensitive moving jaw, plastic canvas or balaclava? And by sensitive, I mean any mouth movement I make showing with the moving jaw. So I don't have to open my mouth really wide to get it to move.

I've heard resin heads produce the most sensitive jaws out there, and I've also seen a post about making the head a certain base, with a resin jaw. How could I achieve this and what base would be best for this?
